Merry Christmas! I’m so happy you stopped by to check out today’s post, but I’ll keep it brief so that you can get back to spending time with your family. So one of my favorite parts of the holidays, aside from seeing my family, is the food! I love all the treats and home cooked food that everyone makes. This year I wanted to contribute a little something so I decided on baking some gluten free chocolate chip cookies! It’s so tough to find the perfect recipe that will yield soft gluten free cookies. I got pretty close with this recipe below:
INGREDIENTS
- 2 cups gluten-free flour (such as Cup 4 Cup)
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup (1 stick) butter
- ¾ cup brown sugar
- ½ cup granulated sugar
- ⅓ cup vegetable oil
- 2 teaspoons vanilla
- 1½ cups chocolate chips
INSTRUCTIONS
- Preheat oven to 350 degrees.
- Whisk together gluten-free flour, baking soda, and salt.
- Mix butter, brown sugar, and sugar together until light and fluffy. Stir in oil and vanilla.
- Stir in chocolate chips.
- Scoop dough balls onto a cookie sheet (I used cookie cutters for mine, but you can use scoops)
- Bake for 10 minutes or until golden brown. It’s best to not over cook because you want that soft center!
